Mustard greens, scallops, clams and hen soup

Taiwanese mustard is usually in abundance in autumn and winter. Cool climates aid the growth and development of mustard greens. There is a large supply of mustard greens in Taiwan from autumn to winter every year. Mustard greens at this time are at their best quality and taste.

Enjoy dishes made with seasonal vegetables that are suitable for the season. We introduce to you the refreshing and sweet mustard greens, scallops, clams and hen soup.

Mustard greens are rich in nutrients:

  • Vitamins C and K, boost immunity and promote bone health.
  • Calcium, magnesium, potassium, beneficial to bone, muscle and nerve function.
  • Dietary fiber, promotes gut health and weight management.
  • Antioxidant, protects cells from oxidative damage.
  • Contains ingredients such as isothiocyanates, which have anti-cancer and anti-inflammatory effects

Ingredients for mustard greens, scallops, clams and hen soup:

  • Half a mustard plant weighs about 1 kilo
  • 1 old hen
  • About 20 dried scallops
  • About 1 pound of clams
  • 6 – 7 slices of ginger
  • A little salt and pepper

Material handling:

  • Remove the hair from the head of the old hen (slaughter the chicken with electricity, the head cannot be cleaned very clean, use a feather clipper to remove the hair from the head of the old hen)
  • Add a few slices of ginger to a pot of water and blanch the old hen, remove the blood, wash and set aside.
  • Wash and dry scallops
  • Clam soaked in water and spit out sand
  • Wash the mustard greens, cut the mustard stems into hob pieces, and cut the leaves into sections

practice:

  1. Put the blanched old hen into the inner pot of the electric cooker for ten people, add scallops, ginger slices and 80% of water. Add 800 CC of water to the outer pot of the electric cooker. Steam three times in a row. The old hen chicken is cooked.
  2. Take out the old hen soup and put it into the gas stove. Add the mustard stems and continue to cook for 10 minutes. Add the mustard leaves and clams. After the clams are boiled, add salt to taste.
